Thanksgiving Vegetarian Walnut and Pecan Loaf Recipe

I’m no chef, I’m a gardener who likes to eat healthy, keep fit and generally practice as I preach. Here’s my meat free loaf a #manmade recipes for relatively healthy no frills meals.

There is always the opportunity to make any recipe healthier for example this recipe could be a plant based nut loaf recipe. Vegan eggs and almond butters are becoming readily available as consumers take control of the vegetable marketplace.

You will need:

4 farm fresh eggs

1 1/2 sticks of butter softened

1 teaspoon of soy sauce

Mix these ingredients until well mixed in a blender and set aside

Finely dice or shred in a food processor the following

1 Large carrot

1 Red onion

3 Celery Sticks

4 Garlic cloves

Fry in a little olive or coconut oil until the onions and carrots soften, allow to cool then add to blender and blend for at least 40 seconds. Realistically now would be a good time to pre-heat the oven 350f, once up to temperature cook for approx 60mins.

In a bowl add the following ingredients

1 cup of cooked brown rice

3/4 teaspoon of Oregano

3/4 teaspoon of Thyme

3/4 teaspoon of Sage

1 tablespoon of fresh yeast

1 cup of ground walnuts and pecan

Mix all dry ingredients well before adding the blended vegetable batter, mixing all the ingredients wet and dry together in a large bowl. The result should be a tan coloured batter ready to pour into a 9″x5″ butter lined loaf pan. Oven at 350f cook for approx 60 minutes try the cocktail stick test at around 55 minutes.
